Ingredients
- 1 lb dried black beans
- 2 bay leaves
- 3 tbsp olive oil
- 1 large white onion
- 2 jalapeños
- 3 cloves garlic
- 1 tbsp chili powder
- 1 tbsp ground cumin
- 2 tsp ground coriander
Steps
- Rinse the beans and place them in a large pot with enough water to cover by 2 inches.
- Add the bay leaves and simmer uncovered for 45 minutes, adding water as needed.
- Chop the onion, jalapeños, and garlic while the beans cook.
- Heat the olive oil in a large skillet over medium heat and cook the onion and jalapeños for 6 minutes.
- Add the garlic, chili powder, cumin, and coriander, then cook for 1 minute.
- Stir the sofrito into the beans and simmer for 20 minutes, until tender and thickened.
