Ingredients
- 3 tbsp extra-virgin olive oil
- 2 fennel bulbs
- 1 tsp kosher salt
- 16 oz gnocchi
- 1 lb cremini mushrooms
- 1/2 tsp freshly cracked black pepper
- chopped calabrian chili peppers (optional)
- 1/4 cup minced fresh flat-leaf parsley
- flaky salt (optional)
Steps
- Bring a large pot of salted water to a boil.
- Slice the fennel and mushrooms while the water heats.
- Cook the gnocchi according to the package directions, then drain it.
- Heat olive oil in a large skillet over medium heat and cook the fennel for 8 minutes.
- Add the mushrooms, salt, and pepper, then cook for 8 minutes.
- Stir in the gnocchi, chili peppers, and parsley, and cook for 3 minutes.
