Ingredients
- 4 flatbreads
- 2 cups chopped fresh baby spinach
- 1/4 cup jarred quartered artichoke hearts (optional)
- 4 oz cream cheese
- 1/4 cup mayo
- 1 1/2 cloves garlic
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/8 tsp crusbed red pepper flakes (optional)
- 1 1/2 cups grated cabot monterey jack cheese (optional)
- 1 roma tomato
Steps
- Heat the oven to 425 F and place four flatbreads on a large baking sheet.
- Stir the cream cheese, mayonnaise, garlic, salt, pepper, and red pepper flakes in a bowl.
- Mix in the spinach and artichokes, then spread the mixture over the flatbreads.
- Top the flatbreads with Monterey Jack cheese and sliced tomato.
- Bake for 12 to 15 minutes, until the cheese melts and the edges are crisp.
