Ingredients
- 2 tbsp olive oil plus a drizzle
- 1 large long shallot sliced
- 2 cloves garlic crushed
- 1/2 tsp ground cumin
- 1/2 tsp smoked paprika
- 400 g can chickpeas drained
- 4 tbsp golden or flame raisins
- 200 g spinach
- 2 tbsp toasted pine nuts
Steps
- Heat the olive oil in a large skillet over medium heat and cook the shallot for 3 minutes.
- Add the garlic, cumin, and smoked paprika, then cook for 1 minute.
- Stir in the chickpeas and raisins and cook for 4 minutes.
- Add the spinach and cook for 4 minutes, stirring until wilted.
- Drizzle with the remaining olive oil, sprinkle with the pine nuts, and cook for 3 minutes.
