- 1/2 cup yellow corn meal
- 1/2 cup almond meal
- 1 tsp baking powder
- 1/2 tsp salt
- 2 eggs
- 1/4 cup almond milk
- 2 tbsp honey
- 1 tsp vanilla extract
- 2 tbsp coconut oil
- 3/4 cup diced strawberries
Steps
- Heat the oven to 375 F and lightly oil six muffin cups.
- Whisk cornmeal, almond meal, baking powder, and salt in a bowl.
- Whisk eggs, almond milk, honey, vanilla, and melted coconut oil in another bowl.
- Stir the wet mixture into the dry mixture, then fold in the strawberries.
- Divide the batter among the muffin cups and bake for 13 minutes, until firm and fully set.
