Ingredients

1 large butternut squash
1 tbsp olive oil
1/4 cup light brown sugar
1 tbsp pure maple syrup
1/2 heaping tsp each: garlic powder and dried thyme leaves
1/4 heaping tsp ground sage
generous pinch each: cinnamon + nutmeg
to taste kosher salt & ground black pepper (optional)
2 tbsp heavy cream (optional)

Steps

Heat the oven to 400 F.
Cut the squash in half, remove the seeds, rub the flesh with olive oil, and place it cut-side down in a 9-by-13-inch pan.
Roast for 35 to 40 minutes until the squash is very tender.
Scoop the squash into a large bowl and mash in the butter, brown sugar, maple syrup, garlic powder, thyme, sage, cinnamon, nutmeg, salt, and pepper.
Stir in the optional heavy cream until smooth, then serve hot within 50 minutes total.
