Ingredients
- 2 large english cucumbers
- 1 tsp salt and 1/4 tsp freshly ground black pepper
- 3 tbsp apple cider vinegar
- 2 tbsp olive oil
- 1 tbsp mayonnaise
- 1 tsp honey
- 1 1/2 tbsp finely minced fresh parsley
- 1 tbsp minced fresh dill
- 1 tsp minced fresh garlic
- 1/4 red onion
Steps
- Slice the cucumbers and red onion thinly.
- Toss the cucumbers with salt and let them stand for 30 minutes.
- Whisk the vinegar, olive oil, mayonnaise, honey, parsley, dill, garlic, and black pepper in a bowl.
- Drain the cucumbers and pat them dry.
- Toss the cucumbers and onion with the dressing, then rest the salad for 10 minutes.
