- 1 box simple mills pizza dough
- 2 tbsp extra virgin olive oil
- 2 tbsp apple cider vinegar
- 6 tbsp water
- 3/4 cup chunky salsa
- 3/4 cup pepper jack cheese
- 1/3 cup vegetarian refried beans (optional)
- 1 small tomato
- 1/2 cup corn
- 3/4 shredded romaine lettuce
- cilantro (optional)
Steps
- Heat the oven to 375 F and lightly oil a 12-cup muffin pan.
- Mix the pizza dough with the olive oil, apple cider vinegar, and water, then rest the dough for 5 minutes.
- Press the dough into the muffin cups, covering the bottoms and sides evenly.
- Fill each cup with salsa, optional refried beans, pepper jack cheese, tomato, and corn.
- Bake for 15 minutes until the dough is cooked and the cheese melts, then top with romaine and optional cilantro.
