Ingredients
- 3 large eggs
- 1 cup all-purpose flour
- 2 tbsp plus 1/2 cup sugar
- 2 tsp ground cinnamon
- 1 tsp baking powder
- 1 tsp ground ginger
- 1 tsp ground cloves
- 1/4 tsp baking soda
- 1/4 cup butter
- 1/4 cup molasses
- 2 tbsp water
- 1 tbsp confectioners' sugar
- 2 cups apple butter
Steps
- Heat the oven to 375 F and grease a 15-by-10-inch jelly-roll pan with oil.
- Beat the eggs and 2 tablespoons sugar until thick, then whisk in the flour, cinnamon, baking powder, ginger, cloves, and baking soda.
- Melt the butter, stir in the molasses and water, and fold this mixture into the batter; spread it in the pan.
- Bake for 12 to 15 minutes until the cake springs back when touched, then roll it tightly from one short side while warm and cool completely.
- Unroll the cake, spread the apple butter evenly over it, roll it again, and dust with confectioners' sugar.
