1 cup whole wheat pastry flour or all purpose flour
1/2 tsp fine sea salt
1/4 cup refined coconut oil
1/4 cup ice water
1 tbsp fresh lemon juice
1/2 cup cane sugar
3 tbsp whole wheat pastry flour or all purpose flour
1 1/2 tsp cinnamon
3/4 cup whole wheat pastry flour or all purpose flour
1/3 cup chopped pecans
1/3 cup coconut sugar
1/4 tsp fine sea salt
1 tsp cinnamon
1/3 cup refined coconut oil

Steps

Heat the oven to 375 F and mix 1 cup flour, salt, coconut oil, and ice water into a dough.
Press the dough into a 9-inch pie pan and chill it for 10 minutes.
Toss the apples with lemon juice, sugar, 3 tablespoons flour, and 1 1/2 teaspoons cinnamon.
Fill the crust with the apples and mix the remaining flour, pecans, coconut sugar, salt, cinnamon, and coconut oil into crumbs.
Sprinkle the crumbs over the apples and bake for 50 minutes, until the crust and topping are golden.
Cool the pie for 15 minutes before cutting.
