Ingredients
- 3 tbsp butter
- 3 cloves garlic
- 1 onion
- 2 tbsp fresh thyme leaves
- 1/2 tsp kosher salt and freshly ground black pepper
- 2 cups heavy cream
- 1 cup chicken broth
- 5 lb yukon gold potatoes
- 3 bay leaves
- 1 cup gruyere cheese
- 1 cup parmesan cheese
Steps
- Heat the oven to 375 F and butter a 9-by-13-inch baking dish.
- Cook the chopped onion and garlic in a saucepan with butter over medium heat for 5 minutes.
- Add the cream, broth, thyme, bay leaves, salt, and pepper, then simmer for 5 minutes.
- Layer the sliced potatoes in the baking dish and pour the warm cream mixture over them.
- Cover and bake for 40 minutes, then uncover, top with Gruyere and Parmesan, and bake for 15 minutes until tender and bubbling.
