Ingredients
- 1 head garlic
- 1 tsp olive oil
- 2 chicken breasts
- 2 slices bacon
- 1/2 an avocado
- 1/4 cup tomato
- 3 tbsp red onion
- 2 tbsp green onion
- 1 tsp white wine vinegar
- salt and pepper (optional)
Steps
- Heat the oven to 400 F, wrap the garlic head in foil with olive oil, and roast it for 35 minutes.
- Season the chicken breasts with salt and pepper, wrap each with a bacon slice, and place them in a baking dish.
- Bake the chicken for 35 to 40 minutes, until the thickest part reaches 165 F.
- Mash the avocado with tomato, red onion, green onion, white wine vinegar, salt, and pepper.
- Rest the chicken for 10 minutes, then top it with the avocado salsa.
