Ingredients
- 4 skinless bone-in chicken thighs
- 1 tsp dried oregano
- 1 tsp dried basil
- salt and fresh ground black pepper (optional)
- 1 tbsp olive oil
- 8 oz fresh mozzarella cheese
- 1 cup grape or cherry tomatoes
- fresh basil leaves
- balsamic glaze
Steps
- Heat the oven to 400 F and oil a 9-by-13-inch baking dish.
- Season the chicken thighs with oregano, basil, salt, and pepper, then place them skin-side up in the dish.
- Bake the chicken for 30 minutes, until the thickest part reaches 165 F.
- Add the tomatoes and mozzarella around and over the chicken.
- Bake for 8 to 10 more minutes, until the cheese melts and the tomatoes soften.
- Top with basil leaves and balsamic glaze before serving.
