Ingredients
- 10 oz eggplant
- 1 tsp olive oil
- 1/2 tsp kosher salt and fresh cracked pepper
- 1/2 cup italian seasoned breadcrumbs
- 2 tbsp parmesan cheese
- 1 large egg white
- oil spray
- 1 cup quick marinara sauce for dipping (optional)
Steps
- Heat the oven to 425 F and coat a baking sheet with oil spray.
- Cut the eggplant into sticks about one-half inch thick.
- Whisk the egg white with the salt and pepper.
- Mix the breadcrumbs and Parmesan in a shallow dish.
- Dip each eggplant stick in egg white, then coat it with the breadcrumb mixture.
- Bake for 10 minutes, turn the sticks, and bake for 5 more minutes until crisp.
- Warm the optional marinara sauce while the eggplant bakes.
