Ingredients
- 2 tbsp olive oil
- quarter of an onion
- 1 clove garlic
- 12 oz delallo passata tomato purée
- 1/2 cup broth or water
- torn basil
- 1/4 cup mascarpone cheese
- 1/2 tsp salt
- 1 packages (16 oz) delallo potato gnocchi
- 1 handful baby spinach
- 8 oz fresh mozzarella cheese slices
- parmesan cheese
Steps
- Heat the oven to 400 F and oil a 9-by-13-inch baking dish.
- Cook the onion and garlic in olive oil in a saucepan over medium heat for 3 minutes.
- Stir in the tomato purée, water, basil, mascarpone, and salt, then simmer for 5 minutes.
- Fold the gnocchi and spinach into the sauce and transfer the mixture to the baking dish.
- Top with mozzarella and Parmesan, then bake for 20 minutes until bubbling and tender.
