Ingredients
- 1 tbsp rapeseed oil
- 4 tbsp greek yogurt
- 1/2 bag mint
- 150 g rocket
- 130 g cherry tomatoes
- 400 g beetroot
- 1 beaten egg
- 1 tbsp plain flour
- 1 clove finely chopped garlic
- 1 tsp caraway seed
- 1/2 tsp ground cumin
- 1 lemon
Steps
- Grate the beetroot and squeeze out as much liquid as possible.
- Mix the beetroot, egg, flour, garlic, caraway seeds, and cumin in a bowl.
- Heat the oil in a large skillet over medium heat and spoon in four small portions of batter.
- Flatten the portions and cook for 4 minutes per side, until browned and firm.
- Toss the rocket, tomatoes, mint, and lemon juice in a bowl.
- Serve the hot latkes with the Greek yogurt and salad.
