Ingredients

6 large egg whites
1/8 tsp salt
1/2 tsp cream of tartar
1 1/2 cups superfine sugar
1 tsp vanilla extract
8 oz mascarpone cheese
2 cups heavy cream
6 tbsp granulated sugar
1 1/2 tsp vanilla extract
1 tsp finely grated lemon zest
1 pinch salt
1 few fresh mint leaves (optional)

Steps

Heat the oven to 250 F and line a baking sheet with parchment.
Beat the egg whites, salt, and cream of tartar until soft peaks form, then gradually beat in the superfine sugar.
Fold in the vanilla and cornstarch, shape the meringue into a 9-inch round, and make a shallow center.
Bake for 70 minutes, turn off the oven, and cool the meringue inside for 25 minutes.
Beat the mascarpone, heavy cream, granulated sugar, vanilla, lemon zest, and salt until thick.
Spread the cream over the cooled meringue and top with the mixed berries and mint.
