Ingredients

  • 1 tbsp olive oil
  • 2 cloves garlic
  • 1 onion
  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) black-eyed peas
  • 3/8 tsp cayenne pepper
  • 1 bay leaf
  • 1 package (10 oz) frozen kale
  • salt to taste (optional)
  • pepper to taste (optional)

Steps

  1. Heat the olive oil in a large pot over medium heat.
  2. Cook the chopped onion for 5 minutes, stirring until softened.
  3. Stir in the garlic and cook for 1 minute.
  4. Add the tomatoes, drained black-eyed peas, kale, cayenne, bay leaf, and 1 cup water.
  5. Bring the pot to a boil, then simmer uncovered for 25 minutes.
  6. Remove the bay leaf and season with salt and pepper.
