Ingredients

3 lb sweet potatoes
2 thinly sliced serrano chiles
1/4 cup coconut oil
1 lime
2 tbsp granulated sugar
3/4 tsp kosher salt
2 tbsp minced chives
sea salt flakes for sprinkling (optional)

Steps

Heat the oven to 425 F and line a large rimmed baking sheet with oil.
Cut the sweet potatoes into wedges and spread them on the baking sheet.
Roast the wedges for 50 minutes, turning them after 30 minutes.
Cook the coconut oil and serrano chiles in a small skillet over medium heat for 5 minutes.
Stir the lime juice, lime zest, sugar, kosher salt, and chives into the warm serrano oil.
Toss the roasted sweet potatoes with the lime mixture and rest them for 5 minutes before sprinkling with sea salt flakes, if using.
