Ingredients
- 1 whole chicken
- 2 tbsp olive oil
- 2 shallots
- 2 tbsp finely chopped ginger
- 1 tsp ground cardamom
- 1/2 cup dry white wine
- 1 cup chicken broth
- 1/4 cup honey
- 1/4 cup orange juice
- 1 lb fresh rhubarb
Steps
- Heat the oven to 375 F and warm the olive oil in a large oven-safe Dutch oven over medium-high heat.
- Brown the whole chicken on all sides for 10 minutes, then transfer it to a plate.
- Cook the shallots, ginger, and cardamom in the Dutch oven for 3 minutes, then add the wine, broth, honey, and orange juice.
- Return the chicken to the pot, cover, and bake for 35 minutes.
- Add the rhubarb around the chicken, cover, and bake for 20 minutes more until the chicken reaches 165 F.
- Rest the chicken for 10 minutes before carving it with the braising juices.
