- 1 1/2 tbsp vegetable oil
- 8 corn tortillas
- 8 slices bacon
- 8 large eggs
- 2 tbsp mild green chiles
- 3/4 tsp sea salt
- 1 1/4 cup shredded cheddar cheese
- 1/4 cup chopped fresh cilantro (optional)
- 1 avocado
- 1/3 cup pico de gallo
- 1 lime (optional)

Steps
- Cook the bacon in a large skillet over medium heat for 8 to 10 minutes, then drain and crumble it.
- Warm the tortillas in the skillet for about 30 seconds per side, then keep them warm.
- Whisk the eggs, green chiles, and salt, then cook them in the oiled skillet over medium-low heat until firm, about 5 minutes.
- Fill the tortillas with eggs, bacon, and cheese, then add avocado, pico de gallo, cilantro, lime, or hot sauce.
