Ingredients
- 3 cups hot mashed potatoes
- 3 oz cream cheese
- 1/4 cup whole milk
- 1 large egg
- 2 tbsp butter
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 can (2 4/5 oz) french-fried onions
- 2 1/4 cups fresh broccoli florets
- 1 cup shredded cheddar cheese
Steps
- Heat the oven to 350 F and grease a 2-quart baking dish with cooking oil.
- Steam the broccoli in water for 4 minutes, then drain it well.
- Stir the hot mashed potatoes with cream cheese, milk, egg, butter, salt, and pepper.
- Fold in the broccoli and half the fried onions, spread the mixture in the dish, and bake for 25 minutes.
- Top with cheddar and the remaining onions, then bake for 10 minutes until hot and the egg mixture is firm.
