Ingredients
- 2 tblsp rapeseed oil
- 1 finely chopped onion
- 1 celery
- 1 sliced leek
- 1 potatoes
- 1 knob butter
- 1 L hot vegetable stock
- 1 head chopped broccoli
- 140 g stilton cheese
Steps
- Heat the oil and butter in a 4-quart pot over medium heat for 2 minutes.
- Add the onion, celery, and leek, and cook for 8 minutes until softened.
- Stir in the potato and hot stock, cover the pot, and simmer for 15 minutes.
- Add the broccoli and simmer uncovered for 10 minutes until the vegetables are tender.
- Blend the soup until smooth, stir in the Stilton, and cook for 5 minutes.
