Ingredients
- 2 1/4 cups frank's redhot wings buffalo sauce
- 8 tbsp butter
- 2 lb ground chicken
- 4 green onions
- 4 cloves garlic
- 2 ribs celery
- 2 eggs
- 1 tsp kosher salt
- 1 tsp freshly ground black pepper
- 1 cup plain breadcrumbs
- canola oil for brushing the tops of the meatballs (optional)
- blue cheese dressing for dipping
Steps
- Heat the oven to 400 F and line a baking sheet with oil.
- Mix the chicken, chopped green onions, garlic, celery, eggs, salt, pepper, and breadcrumbs in a large bowl.
- Shape the mixture into 24 meatballs and place them on the baking sheet.
- Bake for 18 to 20 minutes, until the centers reach 165 F.
- Melt the butter with the buffalo sauce in a small saucepan over medium heat for 5 minutes.
- Toss the cooked meatballs in the sauce and serve with blue cheese dressing.
