Ingredients
- 2/3 cup pecans
- 1/2 cup heavy cream
- 1 large egg
- 1 tsp vanilla extract
- 1/2 tsp salt
- 1 tbsp baking powder
- 3 tbsp dark brown sugar
- 6 tbsp cold unsalted butter
- 2/3 cup butterscotch chips
- demerara sugar (optional)
Steps
- Heat the oven to 425 F and grease a baking sheet with butter.
- Toast the pecans in a dry skillet over medium heat for 3 minutes, then chop them.
- Whisk the cream, egg, and vanilla in a small bowl.
- Whisk the cake flour, salt, baking powder, and brown sugar in a large bowl, then cut in the cold butter.
- Stir in the pecans and butterscotch chips, then mix in the cream mixture until a dough forms.
- Pat the dough into an 8-inch round, cut it into 8 wedges, sprinkle with demerara sugar if desired, and bake for 14 to 16 minutes.
