- 1 1/2 tsp apple pie spice
- 1 tsp salt
- 3 large eggs
- 1/2 cup white sugar
- 1/2 cup brown sugar
- 3/4 cup vegetable oil
- 1/4 cup milk
- 1 tsp vanilla
- 2 cups shredded carrots
- 1/2 cup raisins
- 1/2 cup chopped pecans or walnuts
Steps
- Heat the oven to 350 F and grease a 9-by-5-inch loaf pan with cooking oil.
- Whisk the flour, baking soda, apple pie spice, and salt in a medium bowl.
- Beat the eggs, white sugar, brown sugar, oil, milk, and vanilla in a large bowl.
- Stir the dry mixture into the egg mixture, then fold in the carrots, raisins, and nuts.
- Bake for 50 to 55 minutes, until the center is set and reaches 160 F, then cool for 10 minutes.
