Ingredients
- 1 cup graham cracker crumbs
- 2 tbsp sugar
- 1/4 cup butter
- 2 packages (8 oz) cream cheese
- 1/2 cup sugar
- 1 tsp vanilla extract
- 1 tsp lemon juice
- 1 cup heavy whipping cream
- 1 cup whipped cream
- 1 cup mixed fresh berries
Steps
- Melt the butter, stir it with the graham cracker crumbs and 2 tablespoons sugar, and press the mixture into 12 small cups.
- Chill the crumb bases for 5 minutes.
- Beat the cream cheese, 1/2 cup sugar, vanilla, and lemon juice in a bowl until smooth.
- Whip the heavy cream until firm peaks form, then fold it into the cream cheese mixture.
- Spoon the filling over the chilled crusts, top with whipped cream and mixed berries, and chill for 10 minutes.
