Ingredients

8 oz yukon gold potatoes
3 slices bacon
1/2 cup diced onion
1/2 cup diced red bell pepper
4 large eggs
1/2 cup heavy cream
4 oz grated cheese
salt and pepper to taste (optional)
2 tbsp chopped green onion (optional)

Steps

Heat the oven to 425 F and oil a 9-inch square baking dish.
Toss the diced potatoes with oil, salt, and pepper, then roast them in the dish for 20 minutes.
Cook the bacon in a skillet over medium heat for 6 to 8 minutes, then drain and crumble it.
