Ingredients
- 8 oz cremini mushrooms
- 4 boneless skinless chicken breasts
- 1/2 cup all-purpose flour
- 3/4 cup marsala
- 3/4 cup chicken broth
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/4 cup green onions
- 2 cups mozzarella
- 1 1/2 tbsp fresh parsley
Steps
- Heat the oven to 400 F and lightly oil a 9-by-13-inch baking dish.
- Pound the chicken breasts to an even thickness, then season them with salt and pepper.
- Coat the chicken with flour and brown it in an oiled large skillet over medium-high heat for 3 minutes per side.
- Cook the mushrooms in the skillet for 5 minutes, then add the Marsala and broth and simmer for 4 minutes.
- Place the chicken in the baking dish, pour the mushroom sauce over it, and cover with mozzarella.
- Bake for 15 minutes, until the chicken reaches 165 F, then top with green onions and parsley.
