Ingredients
- 3 cups cooked shredded chicken breast
- 2 1/2 cups spaghetti or marinara sauce or homemade tomato sauce
- 3 zucchini
- 1 1/2 cups shredded mozzarella
Steps
- Heat the oven to 400 F and spread 1 cup of sauce in a 9-by-13-inch baking dish.
- Slice the zucchini lengthwise into thin strips and arrange them on a baking sheet.
- Bake the zucchini strips for 8 minutes until flexible, then cool them briefly.
- Mix the chicken with 1 cup of sauce and place the mixture on each zucchini strip.
- Roll the strips tightly and place them seam-side down in the baking dish.
- Check that the thickest part of the poultry reaches 165 F before serving.
- Cover the rolls with the remaining sauce and mozzarella, then bake for 25 minutes until bubbling and hot.
