Ingredients
- 4 cups stemmed and torn collard greens
- 1 cans (15 oz) chickpeas
- 3 cloves garlic
- 1 1/2 tbsp tahini
- 1 1/2 tbsp fresh lemon juice
- 1/4 tsp cumin
- 1 pinch each sea salt and black pepper
- 3 1/2 tbsp oat flour
- ~4 tbsp avocado or olive oil
Steps
- Drain the chickpeas and blend them with the collard greens, garlic, tahini, lemon juice, cumin, salt, and pepper.
- Mix in the oat flour and shape the mixture into small patties.
- Heat the oil in a large skillet over medium heat for 2 minutes.
- Cook the patties in batches for 3 to 4 minutes per side until browned and firm.
- Transfer the falafel to a plate and cook the remaining patties within 20 minutes.
