Ingredients
- 3 tbsp extra virgin olive oil
- 3 tbsp lemon juice
- 1 clove garlic
- 1/2 tsp sea salt (optional)
- 1/8 tsp black pepper
- 1 1/2 cups cherry tomatoes
- 1 english cucumber
- 15 oz chickpeas
- 1/2 red onion
- 1 avocado
- 1/4 cup cilantro
- 4 oz feta cheese
Steps
- Whisk olive oil, lemon juice, minced garlic, salt, and pepper in a small bowl.
- Halve the tomatoes, dice the cucumber and avocado, and chop the onion and cilantro.
- Drain the chickpeas and add them with the vegetables, cilantro, and feta to a large bowl.
- Toss the salad with the dressing and let it stand for 10 minutes.
