Ingredients
- 1 cup almond flour
- 2 cup powdered sugar
- 6 tbsp cocoa powder
- 4 egg whites
- 1/8 tsp cream of tartar
- 1/2 cup + 2 tbsp sugar
- 2 tbsp unsalted butter
- 2 tbsp raspberry jam or preserves
- 1 cup powdered sugar
Steps
- Heat the oven to 300 F and line baking sheets with parchment.
- Sift the almond flour, 2 cups powdered sugar, and cocoa powder into a bowl.
- Beat the egg whites and cream of tartar until foamy, gradually add the sugar, and beat until stiff peaks form.
- Fold the dry mixture into the egg whites until smooth, then pipe small rounds onto the baking sheets.
- Rest the piped rounds for 30 minutes, then bake for 14 to 16 minutes per batch and cool completely.
- Beat the butter, raspberry jam, and remaining 1 cup powdered sugar until smooth.
- Spread the filling between pairs of cooled shells and chill for 15 minutes.
