- 1 can light coconut milk
- 2/3 cup coconut sugar
- 2 cups vegan graham cracker crumbs
- 6 tbsp coconut oil
- 3 tbsp maple syrup
- 3/4 cup dairy-free chocolate chips
- 1 cup unsweetened shredded coconut
- 3/4 cup pecans
- 1 pinch flaked sea salt (optional)
Steps
- Heat the oven to 350 F and line a 9-by-13-inch pan with parchment.
- Mix the graham cracker crumbs with melted coconut oil, press them into the pan, and bake for 10 minutes.
- Simmer the coconut milk, coconut sugar, and maple syrup in a saucepan over medium heat for 8 minutes.
- Scatter the chocolate chips, shredded coconut, and pecans over the crust, then pour the warm coconut mixture evenly over them.
- Bake the bars at 350 F for 25 minutes, then cool them in the pan for 20 minutes.
- Chill the bars for 7 minutes, then cut them into pieces.
