Ingredients
- 2 tsp olive oil
- 2 leeks
- 2 cloves garlic
- 3 carrots
- 1 yellow pepper
- 1 lb lean corned beef brisket
- 6 cups water
- 2 bay leaves
- 1/4 cup chopped parsley (optional)
- 1 large potato
- 1 head cabbage
- fresh pepper to taste (optional)
Steps
- Heat the oil in a large soup pot over medium heat, then cook the leeks, garlic, carrots, and yellow pepper for 5 minutes.
- Add the corned beef, water, and bay leaves, then bring the pot to a boil.
- Cover and simmer gently for 60 minutes, until the beef reaches at least 145 F.
- Remove the beef, add the potato and cabbage, and simmer the soup for 20 minutes.
- Slice or shred the beef, return it to the pot, and simmer for 10 minutes more.
- Remove the bay leaves and season the soup with pepper.
