Ingredients
- 1 orange
- 1/2 cup butter
- 3/4 cup granulated sugar
- 2 eggs
- 1/2 cup light cream
- 1 1/2 cups all-purpose flour (optional)
- 1 tsp baking powder
- 1/2 tsp salt
- 1 1/4 cup cranberries
- 2 tbsp powdered sugar
- 2 tbsp milk
Steps
- Heat the oven to 350 F and grease a 9-by-5-inch loaf pan.
- Zest the orange and squeeze enough juice for the batter and glaze.
- Beat the butter and sugar in a large bowl, then beat in the eggs, orange zest, and cream.
- Stir in the flour, baking powder, and salt, then fold in the cranberries.
- Spread the batter in the pan and bake for 50 to 55 minutes, until a tester comes out clean.
- Cool the loaf for 15 minutes, then stir the powdered sugar, milk, and 1 tablespoon orange juice together and drizzle over it.
