Ingredients
- 2 tbsp unsalted butter
- 1 lb jumbo shrimp
- 4 1/2 cloves garlic
- 4 oz grape tomatoes
- 1/2 cup basil pesto
- 1/2 cup parmesan cheese
- 1 pinch salt (optional)
- 1 pinch pepper (optional)
- 1 tbsp fresh parsley
Steps
- Melt the butter in a large skillet over medium heat and cook the garlic for 30 seconds.
- Add the shrimp, season with salt and pepper, and cook for 2 minutes per side until opaque and 145 F.
- Transfer the shrimp to a plate, then cook the tomatoes in the skillet for 2 minutes.
- Stir in the pesto and half and half, and simmer for 3 minutes.
- Whisk in the Parmesan, return the shrimp to the skillet, warm for 2 minutes, and stir in the parsley.
