Ingredients
- 2 tbsp olive oil
- 1 large yellow onion
- 2 1/2 cups diced ham
- 2 1/2 oz fresh baby spinach
- 1 cup shredded cheese
- 12 eggs
- 1/2 cup milk
- 1 tbsp dijon mustard
- 1 tsp salt
- pepper to taste (optional)
- 5 1/2 mini croissants
Steps
- Heat the oven to 350 F and oil a 9-by-13-inch baking dish.
- Heat the olive oil in a large skillet over medium heat, then cook the onion for 5 minutes.
- Add the ham and spinach, cook for 3 minutes until the spinach wilts, and spread the mixture in the dish.
- Whisk the eggs, milk, mustard, salt, and pepper, then pour them over the filling.
- Arrange the croissants over the top, sprinkle with cheese, and rest for 10 minutes.
- Bake for 30 minutes, until the eggs are firm and reach 160 F.
