- 2 cups all-purpose flour
- 4 tsp baking powder
- 1/2 tsp salt
- 1/2 tsp ground nutmeg
- 2 cups eggnog
- 2 large eggs
- 3 tbsp butter
- 1/2 tsp rum extract
- maple syrup (optional)
Steps
- Whisk the flour, baking powder, salt, and nutmeg in a large bowl.
- Whisk the eggnog, eggs, melted butter, and rum extract in a separate bowl.
- Stir the wet mixture into the dry mixture just until combined.
- Heat a large skillet over medium heat and lightly butter it.
- Cook 1/4-cup portions for 2 to 3 minutes per side, until golden and firm with the eggs fully cooked.
- Repeat with the remaining batter, buttering the skillet as needed.
