- 2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 2 1/2 tsp ground ginger
- 1 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 tsp ground cloves
- 1 1/4 cups water
- 1/2 cup unsulphured molasses
- 2 large eggs
- 3 tbsp unsalted butter
- maple syrup (optional)
Steps
- Whisk the flour, baking powder, baking soda, salt, ginger, cinnamon, nutmeg, and cloves in a large bowl.
- Whisk the water, molasses, and eggs in a second bowl until blended.
- Stir the wet mixture into the dry mixture just until combined, then rest the batter for 5 minutes.
- Melt the butter in a large skillet over medium heat.
- Cook quarter-cup portions for 2 to 3 minutes per side, turning when bubbles form and the centers reach 165 F.
- Repeat with the remaining batter, adding more butter to the skillet as needed.
