Ingredients
- 2 large artichokes
- 1 tbsp black peppercorns
- 4 cloves garlic
- 1 lemon
- olive oil
- kosher salt and freshly ground black pepper (optional)
- 1/2 cup butter
- 2 lemons
- 2 cloves garlic
- 1/2 tsp kosher salt
- 7 fresh thyme
Steps
- Heat a grill to medium-high and trim, halve, and remove the chokes from the artichokes.
- Boil the artichokes in salted water with peppercorns, four garlic cloves, and lemon halves for 25 minutes.
- Melt the butter in a small saucepan with the remaining garlic, lemon juice, salt, and thyme for 5 minutes.
- Brush the drained artichokes with olive oil and grill them cut-side down for 6 minutes per side.
- Rest the grilled artichokes for 3 minutes, then spoon the warm garlic butter over them.
