Ingredients
- 1/2 cup extra virgin olive oil
- 2 cloves garlic
- 3 slices good quality french bread
- 10 oz cherry tomatoes
- kosher salt and freshly ground black pepper
- 12 oz bread cheese
- 21 basil leaves
- 2 tbsp balsamic glaze for drizzling (optional)
Steps
- Warm the olive oil and garlic in a small saucepan over low heat for 3 minutes, then remove the garlic.
- Cut the bread and bread cheese into bite-size pieces, and toss the bread with the garlic oil.
- Heat a grill to medium, about 400 F, for 5 minutes.
- Thread tomatoes, bread, bread cheese, and basil leaves onto skewers.
- Grill the skewers for 8 to 10 minutes, turning often, until the tomatoes blister and the cheese browns.
- Season with salt and pepper, then drizzle with balsamic glaze if using.
