Ingredients
- 1 1/2 tbsp ground dried ancho chile powder
- 1 tbsp dried oregano
- 1/2 tbsp ground cloves
- 1/4 tsp ground cinnamon
- 3 cloves garlic
- 3 tbsp vinegar
- 1/4 cup orange juice
- 1 lime
- 1 tsp salt
- 1 whole chicken
- 1 bunch green onion
Steps
- Whisk the ancho chile powder, oregano, cloves, cinnamon, minced garlic, vinegar, orange juice, lime juice, and salt in a bowl.
- Coat the whole chicken with the marinade, cover, and refrigerate for 1 hour.
- Heat an outdoor grill to 400 F, then set it for indirect cooking with a cooler side.
- Place the chicken breast-side up over the cooler side, cover the grill, and cook for 50 to 60 minutes.
- Add the green onions over direct heat during the final 5 minutes, turning them once.
- Move the chicken over direct heat briefly if needed for browning, then remove it when the thickest parts reach 165 F and rest for 10 minutes.
