Ingredients
- 2 lb extra large or jumbo shrimp
- 6 tbsp extra-virgin olive oil
- 1 cup basil leaves
- 3 cloves garlic
- 1/4 tsp crushed red pepper flakes
- 1/2 tsp salt
- 1/4 cup grated parmigiano-reggiano
- 1/4 cup walnuts
- 1 lemon (optional)
Steps
- Finely chop the basil, garlic, walnuts, and red pepper flakes in a bowl.
- Stir in the olive oil, salt, and grated cheese to make the pesto.
- Heat a grill to medium-high, about 400 F, and oil the grates.
- Thread the shrimp onto skewers or place them directly on the grill.
- Grill the shrimp for 3 to 4 minutes per side until opaque and 145 F.
- Toss the hot shrimp with the pesto and serve.
