Ingredients
- 2 cups jasmine rice
- 1 3/4 cup cold water
- 1 3/4 tsp fine salt
- 3 tbsp + 2 teaspoons peanut oil
- 4 large eggs
- 1 cup frozen vegetables
- 2 stalks green onions
- optional: a dash of white pepper
Steps
- Rinse the jasmine rice, then place it in the Instant Pot with cold water and salt.
- Cook on high pressure for 4 minutes, then let the pressure release naturally for 10 minutes.
- Heat 2 teaspoons of peanut oil on the sauté setting, scramble the eggs for 4 minutes, and cook them firm.
- Add the frozen vegetables and cook for 4 minutes until hot.
- Add the cooked rice, remaining peanut oil, green onions, and white pepper, then stir-fry for 5 minutes.
