Ingredients
- 1/2 lb spaghetti
- 2 cup kale
- 4 slices bacon
- 3 large eggs
- 3/4 cup freshly grated parmesan cheese
- freshly ground black pepper
Steps
- Boil the spaghetti in salted water until tender, about 8 to 10 minutes.
- Cook the bacon in a large skillet over medium heat until crisp, about 5 minutes.
- Add the kale to the skillet and cook for 2 minutes until wilted.
- Whisk the eggs, Parmesan, and pepper in a bowl.
- Drain the pasta, reserving 1/2 cup water, and add it to the skillet.
- Stir in the egg mixture over low heat, adding water as needed, until the eggs are firm and reach 160 F.
