Ingredients
- 12 lb turkey
- salt & pepper
- 1 cup unsalted butter
- 2 tbsp olive oil
- 4 tbsp fresh lemon juice
- 3 large garlic cloves
- 1/4 cup freshly chopped parsley
- 1/2 tbsp salt
- 1/2 tsp black pepper
- 1 large onion
- 4 cloves garlic
- 1/2 bunch parsley
- 1 lemon
Steps
- Heat the oven to 425°F and remove the turkey giblets.
- Mix the butter, olive oil, lemon juice, minced garlic, parsley, salt, and pepper.
- Rub the mixture over the turkey and place the onion, garlic, parsley, and lemon inside the cavity.
- Roast the turkey in a large roasting pan at 425°F for 20 minutes.
- Reduce the oven to 325°F and roast for 115 minutes, until the thickest breast and thigh reach 165°F.
- Rest the turkey for 20 minutes before carving.
