Ingredients
- 1 cup dried lentils
- salt (optional)
- 2 tbsp olive oil
- 1 yellow onion
- 1/2 cup chopped walnuts
- 16 unsweetened dried apricots
- 1 handful parsley (optional)
- black pepper (optional)
Steps
- Rinse the lentils and simmer them in water in a medium saucepan for 25 minutes, until tender.
- Chop the onion and dried apricots while the lentils cook.
- Heat the oil in a large skillet over medium heat, then cook the onion for 5 minutes.
- Add the walnuts and apricots, and cook for 3 minutes.
- Drain the lentils, stir them into the skillet, and season with salt and pepper.
