Ingredients
- 8 oz elbow macaroni noodles
- 1/2 cup diced celery
- 1/2 cup diced red bell pepper
- 1/2 cup green onions
- 2 hard boiled eggs (optional)
- 1 cup mayonnaise
- 1 tbsp yellow mustard
- 2 tbsp white or red wine vinegar
- 1 tsp kosher salt
- 1/4 tsp pepper

Steps
- Boil the macaroni in a large pot of salted water for 8 minutes until tender, then drain and cool with water.
- Stir the mayonnaise, mustard, vinegar, salt, pepper, and paprika in a large bowl.
- Add the macaroni, celery, red pepper, green onions, and chopped eggs to the bowl.
- Fold the ingredients together until evenly coated.
- Chill the salad for 20 minutes before serving.
