Ingredients
- 200 g fine green beans trimmed
- 3 passion fruits
- 1 1/2 tbsp honey
- 2 tbsp extra virgin olive oil
- 10 g ginger peeled and finely grated
- 3/4 red chilli deseeded and finely chopped
- squeeze of lime juice to taste (optional)
- 1 kg mangoes
- 1 tbsp chopped coriander
- 1 tbsp mint leaves
Steps
- Trim the green beans and cut the mangoes into bite-size pieces.
- Scoop the passion fruit pulp into a small bowl and stir in the honey, olive oil, ginger, chili, and lime juice if using.
- Combine the green beans, mangoes, coriander, and mint in a large bowl.
- Pour the dressing over the salad and toss gently.
- Let the salad stand for 15 minutes before tossing once more.
